A-MAZE-N smokers(amns) are light weight, durable and portable smoke generators, that produce great quality smoke for cold and hot smoking. They are versatile enough to be used in just about any smoker or a grill. The original A-MAZE-N smokers were designed to burn sawdust for cold smoking, but customers quickly found them useful at higher temps. The "new" A-MAZE-N pellet-smoker(amnps) is also a light weight, durable and portable smoke generator, but it's designed to burn pellets or sawdust. The new pellet smoker will produce smoke during cold smoking and hot smoking, tested up to 275°! Designed to supplement smoke in an electric smoker, but can be used in just about any smoker or grill.

Smoke generation has been an issue with all of my smokers. I've tried lots of approaches, the methods supplied with the smokers and other methods as well.
This one works perfectly. With one filling, you can generate smoke for long enough to last overnight, and whenever you use it, you don't have to check it every hour. It uses pellets, which are widely available in a variety of woods. If your smoker uses sawdust, that's less available, and less convenient to handle.
The smoke generator is easy to light. I just aimed a culinary torch into the open hole that's on one end of it, let it burn for five minutes as the instructions suggested, then put it into the smoker. Very soon, I saw smoke pouring out all around the door. I'd estimate that one load of pellets could give you easily 12 hours of smoke. That was for a cold smoke; for a hot smoke it would be less time.
The smoker is quite well made. Happily, it's all stainless steel, which gives it a good chance of standing up to the job of holding things while they burn. It's sturdily made and simple; I expect it to last for many years. I'll no longer use the wood chip box that came with my smoker, and will use this instead. I get much more smoke, and of course for much longer.
I indicated that it's easy to clean, and you could just put it into the dishwasher, but it never touches food, just hold smoldering wood pellets. So other than dumping out ash, I don't plan to ever clean it. Why should I?
The smoker comes with an unusually thorough user's guide that tells you how to use the smoker for hot smoking and cold smoking. It even has recipes that look very good. Today I made smoked deviled eggs--all who tried them liked them, saying that they were something different, that the smoke flavor complemented the seasonings in the eggs.
This pellet tray design completely eliminates that problem. Once the pellets are well lit at one end it burns evenly for hours consistently producing smoke. I found that in my smoker one row of pellets burns for 4 hours, so it is easy to figure out how many rows to fill depending on the anticipated time of the cook. It is also welded together like a tank, this will last a long time.
There are a few things to keep in mind for best results. First, make SURE the pellets are dry and well lit. Keep hitting them with a torch as needed to keep a small flame going for 10 minutes or so before you put it in the smoker and they will burn on their own and won't let you down. Don't rush this Also, if you have to place your food so that it could drip juices onto the tray, make a small drip shield by cutting a disposable aluminum pan in half and putting it loosely over the pellets. It does benefit from good air flow, so in my smoker which it quite tightly sealed (like a fridge) I just pull the side loading tray out slightly to let some extra air in, and leave the top vent open all the way. You can use any pellets you want, but most are only blends of the flavor wood, like 25% Maple and the rest Oak or Alder. The A-maze-n pellets are 100% the type of wood they are labeled for extra flavor. You can buy your pellets in smaller quantities since even a full tray that will easily burn all night long will hold less than a pound of pellets. I haven't tried this yet, but I hear it is great for cold smoking cheese, since it generates so little heat to produce the smoke.

It is not a problem with the product. It was operator misjudgment. The second time I moved the grid/maze away from the corner so that there would be more cooling. I got through a 6 h smoking cycle without a hitch. The manual does suggest that if you are hot smoking, and running your gas grill to cook something, the pellets may ignite, and you may need a heat shield. Just something to consider when you use it.
I'll just point out that although there are products geared for 2 h, and intermediate length smoking cycles, this maze can get you a wide range of smoking times. All you need to do is adjust how long your fill line is. It has three rows if you will. If you fill just the first row, you will get about 3 h of smoke. Fill two, and you get 6 h. Fill it all the way, and I suspect you will get close to the 10 h that the product advertises. Although I bought both products and don't regret it, if you want to buy just one, this is the more flexible one in my view.

I don't think I'll ever need to own a more expensive smoker unless I'm doing serious volumes and need the racking space. Brilliant and simple product!
5+ stars because it's saved me the money and space of a stand alone smoker unit.
So far as lighting it, I'm using a small butane culinary torch. It takes some time to get the pellets lit well enough to hold a flame. One thing I've done to help is take some plain paper (I use the amazon packing paper) and fold it up into a 1" wide strip, about 2" long. Put that under the pellets right at the "entrance" to the pellet maze (bury it completely). It seems to help get things moving. Do hold the torch on the hole until the pellets get a really nice cherry to them, and a flame, though. Also, make sure you're following the directions and letting that flame keep going for a good 15 min before you blow it out and let things smolder.
This AMNPS puts out as much, if not more, smoke than the original Bradley pucks did. Only the smoke using those Perfect Mix pellets is much nicer. I'm not sure what filler base they use for those Bradley pucks are, but they're nothing like "real" wood pellets used in the AMNPS. The quality of smoke is like night and day, especially with cheese or cold smoked salmon where quality really matters the most. The AMNPS burns good and never went out on me even once when placed in the well-ventilated Bradley cold smoke adapter. Another great thing is that the AMNPS doesn't put out as much heat as the Bradley electric wood burner does, so it allows me to smoke even cooler now.
My biggest regret was not knowing how much trouble I'd have over the years with my Bradley digital, and not throwing out that puck burner from day one. Even when it worked well, those Bradley pucks cost $10 Canadian for just a few hours smoking. With my $40 pound bag of pellets and the AMNPS, one pound of pellets gives me at least 10 hours of trouble-free smoking, so a total of 400 hours for $40! Since the AMNPS doesn't use constant electricity, I save an unknown amount there as well. And did I say, MUCH better smoke too? By being stubborn, I literally wasted hundreds and hundreds of dollars over the years. I just wish I knew sooner.
