My Gal purchased the 30" masterbuilt electric smoker, and we are new at the smoking world. It does hold the temperature we need( max 225), but we find so many different times needed to complete cooking. When we did check the internal temp using a meat thermometer, it was at temp. but was not fully cooked. 2 issues, 1-This was our very first smoking attempt( probably the issue) and 2- it was chicken thighs( worry).

For Christmas we got a 7 pound Semi-boneless cooked ham, and find so many different times on-line. At this point in the game Ive got 2 pages of notes and am so excited to smoke and glaze the ham. My Question @225 degrees, what should the internal temp be?
