Ingredients
1lbCarrots
1lbBaconthin sliced
¼cupJeff's original rubBe generous
Instructions
Cut the tops from about 12 carrots and wash them really well under cold water. Remove any bad spots with a sharp knife.
Wrap thin sliced bacon around the carrots leaving about an inch or two on the ends exposed.
Season the outside of the bacon wrapped carrots with Jeff's original rub and place the carrots on a pan with a rack.
Set up your smoker for cooking at 225°F (107°C) for about 2 hours using maple wood or whatever smoking wood you have available.
At about the 90 minute mark and the 2 hour mark, brush honey onto the carrots.
Check the carrots for tenderness when they have been on the smoker for 2 hours. When they are tender enough and the bacon is done, they are ready to serve.
