Instructions
Coat the beef ribs in steak sauce, then massage in about 1 cup rub. Let them marinate briefly while preparing the smoker.
Prepare the smoker for 225°F. If using the charcoal water smoker described in the article, light a chimney of lump charcoal, add it to the fire pan and add hot water to the water pan.
Place the ribs on the grate and add apple or another preferred smoking wood.
Smoke about 2–2 1/2 hours, until about 170–175°F and tender to your liking. Wind and other conditions may extend the cook beyond 3 hours.
For the optional more-tender finish, smoke about 1 hour, then wrap each rib loosely in heavy-duty foil for the remaining cooking time.
If desired, unwrap and grill over medium heat 5–10 minutes to firm the exterior. Serve with warm barbecue sauce on the side.
Notes
Estimated yield: 6 servings for a typical family batch of large boneless country-style ribs. The original gives no meat weight or count; adjust portions and sauce/rub quantities to the ribs you buy. The foil finish is an alternative to smoking uncovered throughout.
