Instructions
Kabobs
Cut the fully cooked ham and peeled pineapple into uniform chunks. Coat the ham lightly with yellow mustard and stir in about 1/4 cup rub, adding up to another 1/4 cup as desired.
Alternate ham and pineapple on skewers, using about 6 pieces per skewer or adjusting for skewer length. Place on racks for transport.
Set the smoker for about 200°F using pecan, maple or hickory. Smoke for about 2 hours. This recipe starts with fully cooked, ready-to-eat ham.
Combine barbecue sauce and beer until blended. Brush onto kabobs about 20 minutes before finishing, then serve.
Optional potatoes
Boil potatoes in salted water for about 5 minutes, then drain.
Heat vegetable oil in a metal roasting pan over medium heat. Add garlic, turmeric, coriander and cumin seeds and cook about 1 minute.
Add the potatoes and roll to coat. Sprinkle with sugar and a little salt and pepper.
Bake in a 350°F oven for about 30 minutes, turning occasionally. Sprinkle with chives and optional parsley just before serving.
Notes
Ham and pineapple quantities and kabob yield are not specified. The optional potato side serves 4–6; that is not the kabob serving yield.Estimated servings: Best-estimate kabob yield; the original does not specify ham and pineapple quantities, so adjust the count to the actual batch and serving size.
