yellow mustarda thin coating
1cupJeff's original rubapproximately; adjust to ham size
Instructions
Coat the ham with a thin layer of yellow mustard. Sprinkle on about 1 cup rub and massage into the surface and crevices.
Prepare the smoker for about 225°F using hickory, mesquite, apple or another preferred wood.
Place the ham in the smoker and smoke about 3–5 hours, adjusting the time for the size of the fully cooked ham and following its package reheating directions.
Slice and serve. A ham and turkey may share the smoker if there is enough room; add the ham about 2 hours after a turkey that needs 6–7 hours.
Notes
Estimated yield: 12 servings for a typical medium holiday ham. The original does not state a ham weight; portions depend on the ham selected, bone and appetites. This is a method for adding smoke to an already-cooked ham, not instructions for curing or cooking fresh ham. The source gives a 3–5 hour smoking range, so no single exact cook time is assigned.
