If the temperature reading you're relying on isn't accurate, every decision you make after that becomes much more difficult. You can adjust the vents perfectly, manage the fire carefully, and add fuel at exactly the right time, but if the thermometer isn't telling you what the cooking temperature actually is, you're making those decisions based on incomplete information.
That doesn't necessarily mean your thermometer is broken. More often than not, it's simply measuring a different part of the smoker than where your food is actually cooking.

Now let's take a closer look at dome thermometers and digital probes so you can understand the strengths and limitations of each.
What Is a Dome Thermometer
A dome thermometer is the built-in temperature gauge mounted in the lid of many smokers and grills. Nearly every traditional smoker comes with one, and because it's always visible, it's often the first thermometer new pitmasters learn to use.
There's certainly nothing wrong with a dome thermometer. It's convenient, requires no batteries, and allows you to monitor the smoker without opening the lid. The problem is that convenience doesn't automatically mean it's measuring the same temperature your food is experiencing.
Several characteristics influence how a dome thermometer behaves.

Because heat naturally rises, the dome area often runs warmer than the cooking grate. Depending on the smoker, the difference may only be a few degrees or it may be much larger.
This is why many beginners unknowingly cook at lower temperatures than they intended. They believe they're smoking at 250°F (121°C) because that's what the dome thermometer says, when the grate where the food is sitting may actually be closer to 225°F (107°C).
What Is a Digital Probe Thermometer
A digital probe thermometer uses a wired probe placed inside the cooking chamber, usually at or very near grate level. The probe connects to a digital display that continuously shows the cooking temperature where the food is actually sitting.
Rather than measuring the temperature near the top of the smoker, you're measuring the environment surrounding the meat.
That makes digital probes extremely useful when you're trying to maintain a steady cooking temperature over several hours.
Most quality digital thermometers also respond more quickly to temperature changes than traditional analog dome thermometers, allowing you to recognize trends before they become major problems.
Many units also monitor internal meat temperature at the same time, making it possible to keep track of both the smoker and the food without repeatedly opening the lid.

How Dome Thermometers Can Mislead
The biggest limitation of a dome thermometer isn't necessarily that it's inaccurate. It's that it's measuring a different location.
Imagine you're cooking a brisket on the center of the grate. The dome thermometer is several inches above the meat, positioned where hot air naturally collects before leaving through the exhaust. Even if both thermometers are working perfectly, they may display different temperatures simply because they aren't measuring the same place.
That's why comparing a dome thermometer directly to a grate-level probe often leads people to believe one of them must be wrong.
In many cases, both are correct.
They're simply reporting temperatures from different parts of the smoker.
Every smoker has its own airflow pattern, so the difference between the dome and grate can vary considerably. On one smoker they may stay within a few degrees of each other, while another may consistently show a difference of 20°F (11°C), 25°F (14°C), or even more.
Lid thickness, outside temperature, wind, the position of the exhaust, and the location of the fire can all influence the difference between the dome and grate temperatures.
The important thing is learning how your smoker behaves instead of assuming every cooker performs exactly the same way.
How Digital Probes Improve Control
A digital probe gives you information that's usually much more useful because it measures the air surrounding the food rather than the air near the top of the cooking chamber.
That allows you to make vent adjustments based on the temperature that actually affects your brisket, ribs, pork butt, or chicken instead of relying on a reading taken several inches away.
Digital probes also make it easier to recognize gradual temperature trends. Instead of reacting to every small fluctuation, you can watch whether the temperature is steadily climbing, gradually falling, or remaining relatively stable. That makes temperature control much less stressful because you're responding to meaningful changes instead of constantly chasing individual numbers.
A multi-probe thermometer can be even more useful because it allows you to compare different areas of the cooking chamber at the same time. If one side is consistently hotter than the other, you'll know that you're looking at a normal hot zone rather than assuming the smoker temperature itself is out of control.

Should You Ignore the Dome Thermometer?
Not at all.
A dome thermometer can still be a valuable tool once you understand how it compares with the actual cooking temperature at grate level.
For example, suppose you've learned that your smoker's dome thermometer consistently reads about 20°F (11°C) hotter than the center of the cooking grate during normal cooks. Once you know that relationship, you can use the dome thermometer as a quick reference without constantly checking the digital display.
If the dome is reading 270°F (132°C), you may know from experience that your grate is probably somewhere around 250°F (121°C).
In other words, the dome thermometer becomes much more useful after you've learned how it relates to the real cooking environment.
There's no rule that says you have to choose one or the other. The digital probe gives you the more useful measurement for cooking, while the dome thermometer can still provide a quick visual reference whenever you walk past the smoker.
When Both Can Be Useful Together
Many experienced pitmasters use both thermometers because each provides different information.
The digital probe tells you what's happening where the food is cooking, while the dome thermometer tells you what's happening higher in the cooking chamber.
For example, if your dome thermometer is reading 275°F (135°C) while your grate probe is holding around 250°F (121°C), that may simply be the normal temperature difference inside your smoker.
Once you've established that normal relationship, changes become much easier to recognize.
If the difference between the two readings suddenly widens significantly, something may have changed inside or around the cooker. The fire may be burning differently, airflow may have shifted, or weather conditions may be affecting the smoker.

Cold weather can also change how quickly the smoker loses heat and how hard the fire has to work to maintain temperature. You can read more about that in Smoking Meat in Cold Weather.
Using both thermometers gives you more information, and once you understand what each one is measuring, those two readings can tell you quite a bit about what is happening inside the smoker.
Calibration Still Matters
Even the best digital probe or dome thermometer should be checked occasionally because accuracy can change over time.
A simple ice-water test is one of the easiest ways to check the low end of the thermometer. A properly prepared ice-water mixture should read very close to 32°F (0°C).
Boiling water can also be used to check the upper end, but remember that water does not always boil at exactly 212°F (100°C). That number applies at sea level under standard atmospheric pressure. If you live at a higher elevation, water will boil at a lower temperature, so take your elevation into account before deciding that the thermometer is wrong.
If a thermometer is consistently off by a small amount, that doesn't always mean you need to replace it. Some thermometers can be recalibrated, while others simply require you to remember the offset.
What matters is knowing whether the reading can be trusted.

The Practical Recommendation
If you're serious about improving your barbecue, a quality digital probe positioned at grate level should be your primary reference for smoker temperature because it tells you what the cooking environment is actually like around the food.
That doesn't mean you should ignore the dome thermometer. Once you've compared the dome reading with your grate-level probe over several cooks, you'll probably begin recognizing the normal difference between the two, and that makes the dome thermometer much more useful as a quick reference.
For charcoal and wood-burning smokers, keep the exhaust open enough to allow clean airflow through the cooker and make most of your temperature adjustments with the intake. I explain the difference between the two vents in Intake vs Exhaust Smoker Vents.
The goal isn't to decide that one thermometer is good and the other is bad.
The goal is to understand what each thermometer is measuring, know which reading is most useful for the decision you're making, and stop assuming that two different temperatures automatically mean something is wrong.
Once your measurements are reliable, controlling the smoker becomes much easier because you're finally making adjustments based on what is actually happening where the food is cooking.
