One of the first questions people ask when they're getting ready to smoke a brisket is, “What temperature should I cook it at?”
It's a fair question, but it's also one that often gets answered too simply.
The truth is there isn't one perfect temperature that guarantees great brisket every time. Instead, there's a proven range that consistently produces excellent results when it's paired with a clean fire, a little patience, and an understanding of what the brisket is doing throughout the cook.

The Ideal Temperature Range for Brisket
For most backyard pitmasters, the sweet spot for smoking brisket is somewhere between 250°F and 275°F (121°C to 135°C).
This range gives the collagen enough time to gradually break down into gelatin, allows the fat to render properly, encourages good bark development, and keeps the cook moving at a reasonable pace without rushing the meat.
Could you cook a brisket outside of this range? Absolutely.
But if you're looking for consistent, repeatable results, it's difficult to improve on 250°F to 275°F.
225°F vs. 250°F vs. 275°F
One of the longest-running debates in barbecue is whether brisket should be cooked at 225°F, 250°F, or 275°F.
The reality is that all three temperatures are capable of producing outstanding brisket. The differences aren't about right and wrong. They're about understanding the tradeoffs.
Cooking at 225°F (107°C) gives you the longest cook and plenty of time for smoke flavor to develop, but it also extends the stall and increases the amount of time the flat is exposed to heat. If everything goes well, the results can be excellent, but there's less room for error during an all-day cook.
At 250°F (121°C), the cook moves along at a comfortable pace while still allowing plenty of time for collagen to break down and bark to develop. For that reason, it's where many experienced backyard cooks settle most of the time.
Cooking at 275°F (135°C) shortens the overall cook, reduces the length of the stall, and often produces an outstanding bark. As long as the fire is burning cleanly and the brisket is cooked until it's tender, the finished product can be every bit as good as one cooked at a lower temperature.
Why Consistency Matters More Than the Number
One of the biggest mistakes new brisket cooks make is chasing an exact temperature all day long.
Every time the smoker drifts a few degrees, they adjust a vent, change a controller setting, or add more fuel. A few minutes later, they make another adjustment, and then another.
Before long, the smoker is constantly swinging up and down instead of simply cooking.
Brisket doesn't need perfection.
In fact, a smoker that quietly wanders a few degrees above or below your target is usually far better than one that's constantly overshooting because you're trying to force it to stay on one exact number.
The goal is a steady cooking environment, not a perfect thermometer reading.
How Temperature Affects the Brisket Stall
Sooner or later, almost every brisket reaches a point where the internal temperature seems to stop climbing.
That's the stall.
As moisture evaporates from the surface of the meat, it cools the brisket almost as quickly as the smoker is heating it. The result is a period where the temperature changes very little, even though important things are still happening inside the meat.
Cooking at higher temperatures generally shortens the stall and helps move the brisket through it more quickly. Lower cooking temperatures tend to make the stall last longer and naturally increase the total cook time.
Neither approach is automatically better. Understanding what's happening simply helps you decide whether you'd rather wait for the stall to pass naturally or wrap the brisket and keep the cook moving.

Hot and Fast Brisket
You'll occasionally hear people talk about cooking brisket “hot and fast,” which usually means cooking somewhere above 300°F (149°C).
This method can absolutely work, and many experienced pitmasters produce excellent brisket this way.
That said, higher temperatures reduce your margin for error. Fat renders more quickly, bark develops faster, and timing becomes more critical throughout the cook.
If you're still learning brisket, I generally recommend staying within the traditional temperature range until you've developed confidence managing the entire process.
Once you consistently produce good brisket, experimenting with hotter cooks becomes much easier.
Smoker Types and Temperature Behavior
Every smoker manages heat a little differently.
Pellet grills make it easy to maintain a steady cooking temperature with very little effort. Offset smokers require more attention because you're actively managing a live fire throughout the cook. Charcoal smokers fall somewhere in between, relying on airflow and fuel management to maintain stable temperatures.
No matter what type of smoker you're using, resist the temptation to fight it.

When to Adjust Temperature During the Cook
Most briskets don't require major temperature changes once the cook is underway.
In many cases, the best thing you can do is leave the smoker alone and let it work.
There are times when a small adjustment makes sense. You might raise the cooking temperature slightly if the stall is lasting longer than expected, maintain the same temperature after wrapping, or reduce the heat a little if the bark is developing faster than you'd like.
Notice that all of those are small adjustments, not dramatic changes.
Brisket responds much better to steady, thoughtful corrections than sudden swings in cooking temperature.
Internal Temperature vs. Smoker Temperature
One thing that often confuses new pitmasters is the difference between smoker temperature and internal meat temperature.
Your smoker temperature tells you about the environment surrounding the brisket.
The internal temperature tells you how the brisket itself is progressing through the cook.
Neither one tells the whole story by itself.
In the end, brisket is finished when it's tender, not when it reaches one specific internal temperature. The thermometer is an excellent guide, but tenderness is always the final test.

Temperature Is a Guide, Not a Rule
It's easy to get caught up chasing exact numbers, especially when you're cooking your first brisket.
The truth is that great barbecue has never been about hitting one perfect temperature.
Stay somewhere within a proven cooking range, maintain a clean fire, and give the brisket the time it needs to become tender. Those three things will have a much greater impact on the finished product than whether your smoker spent the day at 252°F or 267°F.
Once you stop treating temperature like something you have to fight and start using it as a tool, brisket becomes a much more enjoyable and predictable cook.
