Sweet, smoky, and irresistibly savory, these smoked bacon wrapped honey glazed carrots are the ultimate side dish for any backyard party or get together.
Tender carrots are wrapped in thin bacon, brushed with a rich honey glaze, and slow-smoked to perfection for layers of flavor in every bite. The end result is a simple yet show stopping dish that goes beautifully with another smoked or non-smoked entree or stands strong all on its own.

What You'll Need
- Whole carrots – The skinnier carrots actually work best for this since they cook better and get more tender, but don't fret too much over the size of the carrots; a little variety is a good thing.
- Bacon – I find the thinnest bacon I can find by counting the pieces in the package. A pack with 14 slices of bacon is going to indicate that the bacon is thinner than if it only has, say, 11 slices. Thinner is better.
- Jeff's Original Rub – This rub pairs so well with the sweetness of the carrots, the honey and the savoriness of the bacon. You can purchase the original rub in a bottle for convenience or you can grab the formula and make it yourself HERE.
- Pan with a Rack – I love using these to not only keep my smoker clean but also it makes it stupid easy to move food to the smoker and then back to the kitchen.
- Smoker – I used the Camp Chef Pursuit for these, which is a RV sized portable smoker that I love to take camping with me or for when I'm working in the garage and want to smoke something small. It's perfect and it smokes much better than your average pellet smoker.
What's the big deal about smoked bacon wrapped carrots?
I've been seeing these here and there, usually glazed with maple syrup, but I had honey on the brain and felt like the carrots could handle something a little thicker and a little sweeter than maple syrup.
After tasting these and letting a few other people taste them and hearing their comments, you do not want to wait to make these. They are so tender and savory, and that honey glaze just takes them over the top!
I already have people asking me when I'm going to make them again!
How to Make Smoked Bacon Wrapped Honey Glazed Carrots
Step 1: Process the Carrots
To get started, we need to cut the tops off the carrots and wash them really well. I don't generally scrape my carrots, but I do cut out any bad spots.
Here's the carrots that were in my 1-lb bag:

Step 2: Wrap the Carrots with Bacon
There's no science in wrapping things with bacon. Bacon likes to stick to itself, so you don't need toothpicks or anything like that.
I usually hold the carrot in my left hand and drape about 2 inches of a slice of bacon over the right side of the carrot with my right hand. I then wrap the bacon around the carrot about four times at an angle so it only leaves the ends exposed.

Step 3: Season the Bacon Wrapped Carrots
I'm all about layers of flavor so of course we have to add some seasoning. I went with Jeff's original rub on these.

Place the seasoned, bacon wrapped carrots on a rack and leave them be while you go get the smoker ready.

Step 4: Set Up the Smoker
I used the Camp Chef Pursuit for these, which is an RV sized pellet smoker. It's small, but it does such a great job putting out smoke, and it did not disappoint.
I plugged the pellet smoker into my Jackery portable power station because I didn't want to run an extension cord, and it was fully charged. Well, let's be honest, it's a cool toy, and I just wanted to use it.😅

I filled the smoker full of pellets, and set the temperature to Hi Smoke, which keeps the temperature at about 225°F (107°C) while creating plenty of smoke.

In about 10 minutes, it was ready to go, and I was ready to get those bacon wrapped carrots bathed in smoke!
Step 5: Smoke the Carrots
Place the rack of carrots in the smoker and quickly close the lid.

Let the carrots smoke for about 2 hours.
At the 90 minute mark, you can brush honey on them and then again at the 2 hour mark.

Check the carrots by inserting a thermapen probe in them to not only check for tenderness but they should be reading at least 200°F (93°C) in order for them to be tender.
You can keep smoking them until they get to the tenderness that you like.
Step 6: Serve and Enjoy
Bring the bacon wrapped honey glazed carrots into the house and serve them up as appetizers before the main course or as a side that goes along with your main entree.

Smoked Bacon Wrapped Honey Glazed Carrots
Ingredients
- 1 lb Carrots
- 1 lb Bacon (thin sliced)
- ¼ cup Jeff's original rub (Be generous)
Instructions
- Cut the tops from about 12 carrots and wash them really well under cold water. Remove any bad spots with a sharp knife.
- Wrap thin sliced bacon around the carrots leaving about an inch or two on the ends exposed.
- Season the outside of the bacon wrapped carrots with Jeff's original rub and place the carrots on a pan with a rack.
- Set up your smoker for cooking at 225°F (107°C) for about 2 hours using maple wood or whatever smoking wood you have available.
- At about the 90 minute mark and the 2 hour mark, brush honey onto the carrots.
- Check the carrots for tenderness when they have been on the smoker for 2 hours. When they are tender enough and the bacon is done, they are ready to serve.
- Serve and enjoy!
